Hacker’s Delight (Beans and Rice)
1 pound beans or lentils
1/3 cup picante sauce
1 28 oz can crushed tomatoes (optional)
1 medium onion, diced (optional)
4 carrots, diced (optional)
1/2 cup frozen corn (optional)
1-4 vegetable and/or chicken bouillon cubes
6 large cloves of garlic, pressed (can substitute 1-2 heaping tablespoons of garlic powder)
2 teaspoons kosher salt
1/2 teaspoon black pepper
1 tablespoon crushed chili peppers
1/2 teaspoon cumin
1/2 teaspoon oregano
3 bay leaves
1 1/4 cup rice
Rinse beans.
Soak beans for 6+ hours with a little baking soda in 6-8 cups water.
Rinse thoroughly removing stones etc.
Put all ingredients *except rice* in large thick pan such as dutch oven… cover beans with 2 inches (5cm) water over top of beans. It is a good idea to crimp aluminium foil around the edge of the pot lid to help insure a good seal.
Cook on low (covered) 5+ hours or crock pot high 2 1/2 hours.
Stir every hour on gas, more often on electric.
Add rice.
Cook on low (covered) 1 hour.
Adjust water as necessary by adding more or leaving off lid till rice is tender and almost all water is absorbed.
Serve with cheese and/or additional picante sauce, corn chips.
Also makes decent burrito or taco filler.
It also makes a good wrap in pita bread.
You can also make it more Indian by deleting oregano and bay leaves adding curry powder, garam masala to taste.
By varying the water content you can make this a soup, stew, or casserole.
I usually make this overnight while I am on the computer and then have it for first breakfast.
This costs about 10 dollars and lasts me a week. Hacker’s delight.
